Maria O'Carroll

My dad was a chef, and he’s the one who taught me the basics of cooking before I even went to college. When he passed away, he left me recipes scribbled on post-it notes, and I’ve been mixing his ideas with my own ever since.I studied at CIT (Cork Institute of Technology) and later went to Ballymaloe Cookery School to sharpen my skills and learn about cooking straight from the farm to the plate.

Cooking has always been my way of connecting with people. Whether it’s a comforting classic or something with a bit of a twist, I think food should make you feel good. Over the years, I’ve learned that the best meals come from simple, quality ingredients and putting care into every dish.

Maciej Swat

Hi, I’m Maciej, and my journey in Ireland started back in 2007 when I first arrived from Poland. I started working outside, taking on all kinds of jobs, but eventually found myself in the kitchen as a porter—and that’s where everything changed.

I’ve always loved cooking, from making my own sausages back home to experimenting with new flavors. Over time, I realized the kitchen was where I truly belonged, and I spent more and more time honing my skills. Now, as a chef, I have the privilege of working closely with our head chef, Maria O’Carroll, and being part of an incredible team. For me, it’s not just a job—it’s a passion. The people, the atmosphere, and the country itself make this the perfect place to work and live. I wouldn’t have it any other way!

Sedney Lago

Hi, I’m Sedney, originally from the Philippines but Ireland has been my home since 2014. I’m proud to work as the bar manager in our wonderful seafood restaurant, where I’ve found not just a job, but a family. Alongside my colleague Jenni, we’re the right hands of Ray and Catherine, ensuring everything runs smoothly.

This place is more than just work for me - it’s where I belong. I love the crew, the atmosphere, our loyal customers and, of course, Ireland itself. I truly couldn’t imagine working anywhere else!

Jenni Knecht

My name is Jenni, I'm from Germany and I started working here in 2022. Funny enough, it all started as a holiday in 2021 when I stumbled upon this place by accident - and somehow, I got adopted right away! From that moment, I knew this place was something special.

Now, as a restaurant supervisor, I get to be part of an amazing team. With my colleague Sedney, we support Ray and Catherine in making sure everything runs smoothly. But more than just a workplace, this restaurant has become a second home. The crew, the guests, and the welcoming atmosphere have made Ireland feel like where I truly belong. I couldn’t imagine being anywhere else!
